Preheat the oven to 220 Celsius (425 Fahrenheit).

Whisk 60 mls of vegetable oil with 1 tablespoon of ajdika paste in a bowl.

If you can't find ajdika paste, substitute with 1/2 teaspoon of salt, 1/4 teaspoon of chili flakes, and 1/4 teaspoon of ground coriander seed.

Remove the stems and quarter 1 kilo of button mushrooms.

Cut 1 kilo of potatoes into bite-size pieces.

Chop 1 red pepper into small strips.

Thinly slice 1 red onion, removing the core for easier separation.

Smash and peel 3 cloves of garlic.

Add all the prepared ingredients to the bowl with the adjika mixture and stir to coat.

Transfer the mixture to a large baking dish and cover tightly with foil.

Bake in the preheated oven for 30 minutes.
