Parboil the potato wedges in salted water.

While the potatoes are boiling, prepare the sauce by mixing olive oil, juice of 3 lemons, Dijon mustard, crushed garlic, and chicken broth.

Once parboiled, lay the potatoes on a sheet pan and cover with half of the sauce.
