Start by chopping the onion and dicing it.
Heat olive oil in a skillet over medium heat until warm.
Add the chopped onion to the skillet and sauté until translucent, adding salt to help draw out moisture.
Mince garlic and add it to the skillet after the onion is translucent to prevent burning.
Add a good dose of Italian seasoning and red pepper flakes to the skillet, stirring for about 30 seconds to bloom the herbs.
Add ground beef to the skillet, breaking it up and cooking until fully browned.
If there's excess liquid from the beef, drain it, leaving some fat for flavor.
Pour in red wine and let it cook down until mostly evaporated.
Add a good dose of tomato paste to the skillet, stirring to combine.
Add crushed tomatoes and tomato puree to the skillet, stirring until well mixed, and let it simmer.
In a bowl, whisk together a couple of eggs.
Add cottage cheese to the eggs and mix until combined.
Grate a good block of Parmesan cheese and add it to the mixture.
Add fresh parsley to the cheese mixture and stir until well combined.
Layer the meat sauce in the bottom of a baking dish.
Layer lasagna noodles over the meat sauce, followed by the cottage cheese mixture, and then sprinkle with more Parmesan cheese.
Repeat the layering process until all ingredients are used, finishing with a layer of meat sauce and Parmesan on top.
Cover the baking dish with aluminum foil and bake in the oven until heated through.
Remove the foil and bake for an additional time until the top is golden and bubbly.
