Turn stovetop heat to medium-high and add 2 tablespoons of olive oil.
Once heated, add 1 large chopped onion and cook until softened and translucent, about 3 to 5 minutes.
Add 1 heaping tablespoon of minced garlic and cook until fragrant, about 30 seconds.
Add 1/2 pound of ground beef and 1/2 pound of ground Italian sausage, crumbling the meat while it browns until mostly browned.
Add 5.5 cups of chicken broth, 14.5 ounces of crushed tomatoes, 8 ounces of tomato sauce, and 4 tablespoons of tomato paste to the pot.
Add 1 tablespoon of granulated sugar to cut the acidity of the tomatoes.
Stir in 1.5 teaspoons of Italian seasoning, 1 teaspoon of dried basil, 1 teaspoon of salt, 3/4 teaspoon of ground black pepper, and 1/4 teaspoon of crushed red pepper (optional).
Stir everything together and bring to a boil.
Once boiling, add 2.5 cups of Mafalda noodles and cook for 10 minutes, stirring occasionally until noodles are softened.
Reduce heat to a simmer and let cook for 15 minutes.
In a medium bowl, combine 8 ounces of whole milk ricotta, 1 cup of shredded mozzarella cheese, 1/3 cup of grated Parmesan cheese, and 2 ounces of cream cheese (optional). Stir until combined and add 1 tablespoon of finely chopped parsley.
Add 2 cups of chopped spinach to the soup pot and stir until wilted.
Serve the soup with a dollop of the cheese mixture on top.
