In a large pot set over medium high heat, add 1 tbsp of olive oil.

Add 1 lb of sweet Italian pork sausage with the casing removed and let it brown and fully cook for about 5 minutes, breaking up the meat as it cooks.

Chop 1.5 cups of yellow onion (about half of a large onion) into small pieces.

When the sausage is fully cooked, turn the heat down to medium and add the chopped yellow onion.

Season the onion with 1/2 tsp of salt, 1/4 tsp of black pepper, 1/2 tsp of dried oregano, and 1/2 tsp of crushed red pepper flakes. Cook for about 10 minutes until the onion is soft and translucent.

Mince 3 cloves of fresh garlic and add that to the pot, stirring for about 1 minute.

Add a 25 oz jar of marinara sauce, 3 tbsp of tomato paste, 1 bay leaf, and 6 cups of Swanson unsalted chicken broth to the pot.

Bring the soup to a boil, then reduce it to a simmer and put the lid on. Simmer for 20 minutes.

In a separate pot, bring water to a boil to cook the lasagna noodles. Break 8 oz of lasagna noodles into bite-sized pieces.

Season the boiling water with several large pinches of salt and cook the lasagna noodles according to package directions (about 10 minutes). Drain and rinse the noodles.

After the soup has simmered for 20 minutes, taste for seasoning and adjust if necessary.

To assemble, place a few lasagna noodles into the bottom of a bowl, ladle the hot lasagna soup on top, and top with a sprinkle of mozzarella cheese, a big spoonful of fresh ricotta, and garnish with fresh basil.
