Galette des Rois

Cultural Context

Originating in France, Galette des Rois is traditionally enjoyed during Epiphany, celebrating the arrival of the Magi. Families gather to share this flaky pastry, which often contains a hidden figurine, symbolizing luck and prosperity. The person who finds the fève is crowned king or queen for the day. Today, variations exist across cultures, with similar cakes found in Spain and Latin America, each with unique fillings and traditions.

1/2 cup sugar
3 eggs
1/3 cup room temperature butter
almond extract
2 pastry sheets

almond cream

🥗Healthier: cashew cream

💰Cheaper: hazelnut spread

Cashew cream is lower in calories and still creamy.

puff pastry

🥗Healthier: whole wheat pastry

💰Cheaper: homemade pastry dough

Whole wheat pastry adds fiber while homemade can save costs.

1

Preheat the oven to 395°F.

2

In a bowl, add 1 2/3 cups of almond flour and 1/2 cup of sugar.

3

Add 2 whole eggs and 1 egg yolk to the bowl.

4

Separate another egg, adding the yolk to the bowl and setting the egg white aside.

5

Cut 1/3 cup of room temperature butter into small cubes and add to the bowl.

6

Add a couple of drops of almond extract to the mixture.

7

Blend all ingredients using an electric blender for about 20-30 seconds until smooth.

8

Cut a piece of parchment paper into a circular shape for the bottom of a glass baking pan.

9

Spread the bottom layer of puff pastry in the pan, trimming with scissors as needed.

10

Use a fork to poke holes throughout the bottom of the puff pastry.

11

Pour the almond mixture evenly over the puff pastry in the pan.

12

Optionally, place an almond or ceramic toy inside the filling.

13

Cover with a second layer of puff pastry, trimming and shaping as needed.

14

Use a knife to create a decorative pattern on the top layer of pastry.

15

Brush the top layer with the reserved egg yolk using a paper towel.

16

Bake in the preheated oven for 30-45 minutes until golden brown.

17

Check for doneness by poking a small hole in the top layer; if the knife comes out dry, it's done.

18

Let the tart rest for 20-30 minutes before removing from the pan.

19

Use a knife to separate the edges of the pastry from the pan, then invert onto a plate.
