Pour milk into a saucepan and add half the sugar and vanilla beans.

Bring to a boil and let it infuse for about 15 minutes on low heat.

In a bowl, whisk together egg yolks, the rest of the sugar, and cornflour until light and fluffy.

Remove the vanilla bean from the milk and pour half of the hot milk into the egg yolk mixture, mixing well.

Pour the egg yolk mixture back into the saucepan with the remaining milk and cook on low heat, stirring constantly until thickened.

Once thickened, remove from heat and add butter, mixing until smooth.

Transfer the pastry cream to a flat plate, flatten the top, cover with plastic wrap, and refrigerate for at least 3 hours to cool.

In a mixing bowl, beat softened butter until smooth.

Sift in almond powder and icing sugar, mixing until fully incorporated.

Add egg yolk and the cooled pastry cream to the almond mixture and mix for about 5 minutes until well combined.
