Galette des Rois
Cultural Context
Originating in France, Galette des Rois is traditionally enjoyed during Epiphany, celebrating the arrival of the Magi. Families gather to share this flaky pastry, which often contains a hidden figurine, symbolizing luck and prosperity. The person who finds the fève is crowned king or queen for the day. Today, variations exist across cultures, with similar cakes found in Spain and Latin America, each with unique fillings and traditions.

Whole wheat pastry adds fiber while homemade can save costs.
Pour milk into a saucepan and add half the sugar and vanilla beans.
Bring to a boil and let it infuse for about 15 minutes on low heat.
In a bowl, whisk together egg yolks, the rest of the sugar, and cornflour until light and fluffy.
Remove the vanilla bean from the milk and pour half of the hot milk into the egg yolk mixture, mixing well.
Pour the egg yolk mixture back into the saucepan with the remaining milk and cook on low heat, stirring constantly until thickened.
Once thickened, remove from heat and add butter, mixing until smooth.
Transfer the pastry cream to a flat plate, flatten the top, cover with plastic wrap, and refrigerate for at least 3 hours to cool.
In a mixing bowl, beat softened butter until smooth.
Sift in almond powder and icing sugar, mixing until fully incorporated.
Add egg yolk and the cooled pastry cream to the almond mixture and mix for about 5 minutes until well combined.
To make piping easier, freeze the almond cream by piping it onto baking paper and covering it with another sheet, then freeze for about an hour.
Roll out the store-bought puff pastry into a circle about 24 cm in diameter.
Brush water around the edges of the puff pastry to help seal it.
Pipe the almond cream from the center to the outside of the pastry, or place the frozen almond cream disc in the center.
Place the golden bean (fève) at the edge of the almond cream, not in the center.
Cover with another circle of puff pastry, sealing the edges well to prevent leakage during baking.
Brush the top with egg wash and score a decorative pattern on the surface with a knife.
Bake in a preheated oven at 170°C for 50 minutes to 1 hour, keeping an eye on it while baking.
Once baked, brush simple syrup on top and let it cool before serving.
