Set a pot to medium heat and add water to boil.

Boil 2 jalapeños, 2 tomatillos, and 1 roma tomato for 5 minutes.

Transfer the boiled veggies to a blender along with 1/2 cup of the boiling water.

Add 1/4 small white onion, 2 chiles de arbol, 1 garlic clove, a small bunch of cilantro, 1 tbsp chicken bouillon, and 1/4 tsp ground cumin to the blender.

Blend the mixture until smooth.

Set a pan on medium heat and add oil.

Add 2 lb of beef loin flap meat to the pan, season with salt and pepper, mix, cover, and cook for about 5 minutes.

Add 1/2 small white onion and 3 minced garlic cloves to the meat, mix, cover, and continue cooking.

After 10 minutes, add 4 golden potatoes to the pan and fry for about 5 minutes.

Add the blended salsa to the pan, cover, and cook for 10 minutes or until the potatoes are fully cooked.
