1

Prepare the marinade by combining 1/4 teaspoon rosemary, 1/4 teaspoon dried oregano, 1/2 teaspoon dried thyme, 1/4 teaspoon cayenne pepper, salt and pepper to taste, 3 tablespoons lemon juice, 1 tablespoon minced garlic, and 3 tablespoons olive oil in a container.

2

Mix all the marinade ingredients together.

3

Place 3 boneless skinless chicken thighs in a ziplock bag and pour the marinade over the chicken.

4

Seal the bag and refrigerate for at least 30 minutes.

5

While the chicken is marinating, prepare the tzatziki sauce by dicing an English cucumber (no need to seed it).

6

In a bowl, combine 1 heaping cup of plain Greek yogurt, the diced cucumber, 2 tablespoons of fresh dill, 1 tablespoon of minced garlic, 1 tablespoon of lemon juice, and salt and pepper to taste. Mix well.

7

Put the tzatziki sauce in the fridge until ready to use.

8

After marinating, place the chicken thighs in the air fryer basket and set the temperature to 380 degrees Fahrenheit for 20 minutes, checking halfway through.

9

After 15 minutes, check the internal temperature of the chicken to ensure it's done (should be around 165 degrees Fahrenheit).

10

Let the chicken rest for about 5 minutes before slicing it up.

11

Take a pita and fold it over, adding sliced chicken, tzatziki sauce, feta cheese, and kalamata olives.
