Preheat oven to 210°C (410°F).

Wash and slice off the stalks from the figs and cut each one in half.

Chop the walnuts.

Add the butter into a hot pan to melt.

Add in the sugar and melt together to form a syrup.

Add in the honey and bring to a simmer.

Add the figs to the pan and stir well to coat in the syrup; allow to cook for about 5 minutes, stirring occasionally.

Add in the walnuts to the pan with the figs and mix again; allow to sit in the simmering syrup for a couple of minutes before removing from heat.

Place the puff pastry out on a baking sheet and arrange the figs on top, allowing good space at the edges for the pastry to rise.

Pour the remaining syrup and nuts from the pan on top of the figs and pastry.

Place the baking sheet into the oven and bake the tart for about 15 to 20 minutes until well puffed around the edges and nicely browned.

Remove from the oven and serve immediately with whipped cream or ice cream.
