For the Aviation cocktail, you'll need 2 oz of gin, preferably Aviation gin, 3/4 oz of lemon juice, 1/2 oz of maraschino liqueur, and 1/2 oz of crème de violette.

Start by cutting and juicing the lemons. You'll need a cutting board, knife, and a citrus juicer.

Juice the lemons and pour the juice into sealable storage containers. Use a basket strainer to double strain the juice to remove pulp.

Label and date the lemon juice; it’s good for 2 days, throw it out on the third day.

Fill a shaker tin with ice all the way to the top.

Add 2 oz of gin, 3/4 oz of lemon juice, 1/2 oz of maraschino liqueur, and 1/2 oz of crème de violette to the shaker.
