Measure out 2 cups of all-purpose flour.
In a separate bowl, crack 3 large eggs and add 2 tablespoons of room temperature water.
Whisk the egg mixture together until a gentle froth forms.
Add the egg mixture to the flour and mix it together.
Knead the dough by hand until smooth, ensuring no dry pieces remain.
If the dough is too dry, add a little water; if too wet, add more flour.
Sprinkle flour on the working surface and flatten the dough into a round disc about 6 inches in diameter and 1 inch thick.
Cut the dough into strips about 1 inch wide and then into smaller pieces about 2 inches long.
Sprinkle the pieces with flour to prevent sticking.
Flatten the pieces with your knuckles and palm before passing them through a pasta machine.
Pass the dough through the flat rollers on the largest opening position (setting number 1).
Pass the dough through the machine again on setting number 5.
Repeat the process for a third time on the narrowest setting (setting number 7).
Cut the long thin dough into noodles using the narrowest cutters.
Spread the noodles over a floured surface to dry for storage.
Cook the noodles in soup broth for less than 1 minute, testing after 30 seconds.
