Saint Lucia Day, celebrated on December 13th, honors Saint Lucia, the patron saint of the blind. This pudding, rich in bread and spices, symbolizes light amidst winter darkness. Traditionally, it is served during the feast, often accompanied by saffron buns. In modern times, variations of this dish have emerged, adapting to local tastes and ingredients, making it a beloved festive treat across Italy and beyond.

Soak 5 cups of wheat berries in a pan of water overnight.
In the morning, strain the wheat berries and replace the water in the pan.
Bring the wheat berries to a boil on the stove for 25 minutes.
In the same pan, add 8 cups of whole milk and 2 cups of sugar.
Add 8 tablespoons of corn starch, 1 teaspoon of vanilla, and 1 teaspoon of kosher salt to the pan.
Use special cinnamon sticks (ganda) and grind them in a coffee grinder until fine.
Add 1 teaspoon of the ground cinnamon to the mixture in the pan.
Bring the mixture to a boil while continuously stirring until it thickens and leaves a ribbon effect.
Add 2 to 2.5 cups of the cooked wheat berries into the pudding mixture and stir to combine, breaking up any lumps.
Pour the pudding mixture onto a platter.
Sprinkle fresh ground ganda cinnamon on top of the pudding to taste.
Sprinkle chunks of Hershey's chocolate bar with almonds on top of the pudding.
Serve warm or refrigerate until ready to serve.
