Thaw the turkey completely in the refrigerator for three days and then let it sit on the counter for about an hour.
Rub 3 tablespoons of cooking oil all over the skin of the turkey.
Season the turkey generously with your preferred rub or seasoning inside and outside the cavity.
Prepare a large oven bag by adding 1 tablespoon of all-purpose flour inside and shaking it to coat the interior.
Place the oven bag in a roasting pan and create a layer of aromatics at the bottom using 4 to 5 sticks of chopped celery and 1 large chopped onion.
Add the seasoned turkey into the bag, folding back the sides of the bag to make it easier.
Secure the bag by gathering the end and using the twist tie provided or tying a knot.
Cut six half-inch slits in the top of the bag using kitchen shears.
Place the bagged turkey in a preheated oven at 350°F (175°C).
Roast the 15-pound turkey for approximately 2 hours and 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the breast and 180°F (82°C) in the thigh.
Remove the turkey from the oven and let it sit in the bag for about 20 minutes.
After 20 minutes, cut open the bag and transfer the turkey to a cutting board using two wooden spoons.
Let the turkey rest for another 30 to 45 minutes before carving.
