Apple cider vinegar adds a fruity flavor while being slightly healthier.

Honey offers natural sweetness, while brown sugar can be a cost-effective alternative.

Turn on the heat and add 1 dec of apple cider vinegar to the saucepan.

Add 2 dcit of plain sugar to the vinegar.

Pour in 4 de of water and heat the mixture until the sugar dissolves, but do not cook too much.

Turn off the heat and let the pickling liquid sit while prepping the celery root.

Cut a wedge off the celery root and trim away the top layer with a knife.

Cut the celery root into small cubes.

Pour the pickling liquid over the cubed celery root and mix well.

Seal the container and refrigerate for a couple of days up to a couple of weeks.
