This dish is often associated with gatherings and celebrations, showcasing the warmth of Turkish hospitality. Today, variations exist across Turkey, with different regions using local cheeses and herbs, making it a versatile and cherished treat.

Canola oil is often less expensive and has a neutral flavor.
Boil 3 glasses of water in a pot.
Add 1 tablespoon of granulated sugar, 1 teaspoon of salt, and 1 tablespoon of olive oil to the boiling water.
Add 2 glasses of flour to the mixture and mix well.
Fry the mixture for 2-3 minutes, pressing down with the back of a spoon.
Remove from heat and transfer to a bowl to cool, making a pool shape to speed up cooling.
Once cool enough to handle, sprinkle some flour to prevent sticking and add 1 teaspoon of baking powder.
Knead the dough well until smooth.
Roll out the dough on a floured surface.
Spread butter on the rolled-out dough.
Tightly roll the dough into a roll and seal the junction well.
Cut the rolled dough into small pieces.
Roll out each small piece very small and remove excess flour.
Fill with grated caper cheese and some parsley.
Whisk 1 egg yolk with 1 tablespoon of cooking oil and brush the mixture on the pastries.
Sprinkle sesame seeds on top of each pastry.
Bake in a preheated oven at 185°C (365°F) for 25-30 minutes.
