Slice the ends off the onion, slice in half, peel, and finely chop.

Peel and finely chop the garlic cloves, then set aside with the onion.

Place a saucepan over medium to high heat on the stove.

Heat a small amount of olive oil in the saucepan.

Add the chopped onion and garlic, along with a handful of chopped chorizo; fry for about 5 minutes.

Add 200g of long grain rice to the pan.

Pour boiling water into the pan until the ingredients are just covered.

Leave the Spanish rice to simmer for 15 minutes, topping up the water if needed.

After 15 minutes, add a handful of frozen peas and mix them in; leave to simmer for a further 5 minutes.

After the simmering time, sprinkle over some freshly chopped parsley and mix it in.
