Fried Sweet Plantain

Fried Sweet Plantain, or Maduros, is a beloved dish in Dominican cuisine, often enjoyed as a side or snack. This dish highlights the plantain's natural sweetness, making it a staple in many Caribbean households. Traditionally served alongside savory dishes, it has gained popularity beyond its origin, appearing in various Latin American and Caribbean menus worldwide.

Cut the plantains into pieces without peeling them and wash them.
Boil the plantain pieces in salted water for 10 minutes.
Remove the skin from the boiled plantains and mash them while hot.
Remove any core from the plantains while mashing.
Add 2 tablespoons of butter to the mashed plantains and mix until melted.
Zest one whole lime and one whole orange, and add the zest to the mixture.
Add 1 teaspoon of vanilla extract and 1 teaspoon of almond extract to the mixture.
Add 1/4 cup of light brown sugar to the mixture and mix well, adjusting sugar to taste.
Add 1/2 cup of all-purpose flour, 1 whole egg, and 1 teaspoon of baking powder to the mixture and mix until combined.
Wet your hands to prevent sticking and form the mixture into small balls, about the size of a key lime.
Place the formed balls on a plate coated with flour to prevent sticking.
Heat canola oil in a skillet for frying.
Fry the balls in the hot oil until golden brown.
