Store green plantains in a paper bag under the kitchen sink for about a week and a half to ripen.
Rinse the ripe plantains under water.
Cut off both ends of the plantains.
Score the long side of the plantain with a paring knife, being careful not to cut into the fruit.
Remove the skin from the plantain.
Slice the plantains diagonally into thick pieces.
Heat half an inch of vegetable oil in a frying pan over medium heat.
Add the sliced plantains one by one into the hot oil.
Fry the plantains for about 5 minutes on each side until golden brown.
Use a slotted spoon to transfer the fried plantains to a bowl lined with paper towels.
