Viili is a traditional Finnish yogurt-like dairy product that has been enjoyed for centuries. Its unique texture and mild flavor make it a staple in Finnish households, often served as a snack or breakfast item. Viili is typically made using raw or pasteurized milk and a specific culture that gives it its characteristic viscosity. Today, it is gaining popularity outside Finland, with many health enthusiasts embracing its probiotic benefits.

Almond milk is lower in calories, while soy milk is often less expensive.
Add 4 tablespoons of yogurt starter to 4 cups of milk.
Stir the mixture well to incorporate the yogurt starter into the milk.
Cover the jar with a paper coffee filter or a tight weave tea towel secured with a rubber band.
Place the jar in a warm spot in your house (between 70 and 78°F).
Let it sit for 12 to 18 hours until thickened.
Check if the yogurt is ready by tipping the jar; it should pull away from the sides as a single mass.
Refrigerate the yogurt for 6 hours before serving to stop the culturing process.
Set aside some yogurt to use as a starter for the next batch.
