Its distinctive shape and texture make it a favorite among locals, often served warm with cheese or herbs. In modern times, Barbari has gained popularity beyond Iran, inspiring variations in bakeries worldwide.

Mix 3 cups of flour, 1 teaspoon of instant yeast, 1.5 teaspoons of salt, and 1.5 teaspoons of sugar in a bowl.
Gradually add water and knead into a smooth, non-sticky dough for about 10 minutes.
Place the dough in a greased bowl and let it rise until quadrupled in size, about 1 hour.
Prepare a mixture of 1 teaspoon of baking soda and 1 teaspoon of flour with water, bring it to a boil, and let it cool.
Once the dough has risen, divide it into two portions.
Flour the working surface with semolina and shape the dough into the traditional barbari shape.
Place the shaped dough onto a baking pan lined with foil or parchment paper.
Use your fingers to create traditional lines on the surface of the dough and sprinkle with sesame seeds and black sesame seeds.
Bake in a preheated oven at 450°F for about 10-12 minutes, switching the pans halfway through baking.
