Boil dried fruits (raisins and cranberries) in a saucepan with butter, brown sugar, molasses, and water over medium heat.
Bring the mixture to a boil and simmer for 3 to 4 minutes, then remove from heat and let it cool.
Grease the bottom of the cake pan with butter and line it with parchment paper.
In a bowl, combine flour, baking powder, cinnamon powder, ground all spices, salt, and the zests of one orange and one lemon. Stir to mix evenly.
In a separate bowl, lightly beat 3 eggs until smooth.
Add the cooled fruit mixture to the saucepan, then add chopped pecans and the beaten eggs, mixing well.
Add the flour mixture to the saucepan and combine everything together until there are no dry patches.
Transfer the batter to the prepared baking pan and tap it on the counter to remove large air spaces.
Bake in a preheated oven at 320°F for 75 to 90 minutes, or until a toothpick inserted in the center comes out clean.
After 50 minutes of baking, cover the top with aluminum foil to prevent over-browning.
Remove the cake from the oven and let it cool in the pan for 30 to 40 minutes before transferring it to a cooling rack.
Brush the surface of the cooled cake with light apricot jam.
For better flavor, wait until the next day to slice the cake.
