Traditionally made with veal, it reflects the French culinary tradition of using simple ingredients to create rich flavors. Today, variations exist, using chicken or pork, and it remains a beloved comfort food in France and beyond.

Chicken and pork are more accessible and affordable alternatives.
Melt butter in a large pot over medium heat.
Add veal and brown on all sides for 5-7 minutes.
Remove veal and set aside; add onions and carrots to the pot.
Sauté vegetables until softened, about 4-5 minutes.
Sprinkle flour over vegetables and stir to combine for 1-2 minutes.
Return veal to the pot and pour in white wine and chicken stock.
Bring to a simmer, cover, and cook for 1-1.5 hours until veal is tender.
Add mushrooms in the last 20 minutes of cooking.
In a bowl, whisk together egg yolks, heavy cream, and lemon juice.
Remove pot from heat and slowly stir in the cream mixture.
Return to low heat and stir until sauce thickens slightly, about 3-4 minutes.
Season with salt and black pepper to taste.
Garnish with parsley before serving.
