Add minced garlic and sauté for an additional minute until fragrant.
Stir in diced tomatoes and cook until softened, about 5-7 minutes.
Add chopped green peppers and cook for another 3-4 minutes.
Incorporate the eggplants and mix well to combine.
Season with salt, black pepper, cumin, and red pepper flakes; stir to coat evenly.
Pour in vegetable broth and bring to a simmer.
Cover and cook on low heat for 25-30 minutes, stirring occasionally.
Finish with a squeeze of lemon juice and garnish with chopped parsley before serving.
