Blend onions, green chili, ginger, and garlic in a blender until smooth.
Add minced pork to a bowl and mix in a lot of salt to help it absorb liquid.
Combine the blended green mixture with the pork and add ground black pepper.
Mix in 4 eggs to the meat mixture for fluffiness.
Incorporate half of the flour and milk into the meat mixture, then add the remaining flour and milk and mix well.
Add ground cumin to the meat mixture and combine thoroughly.
In a pan, heat oil or butter and sauté onions, garlic, green chili, and ginger until fragrant.
Add curry powder to the pan and mix until the color changes to yellow.
Stir in roughly chopped carrots and a whole head of celery, mixing well.
Pour in a whole can of coconut milk and combine.
Shape the meatballs and cook them in boiling vegetable stock until they rise to the surface, indicating they are done.
Blend the sauce in the pan to the desired texture, adding freshly ground pepper and adjusting thickness with additional stock if needed.
Add the cooked meatballs to the curry sauce and let them soak for about 10 minutes before serving.
Serve the meatballs and sauce over jasmine rice, garnished with chopped cilantro and a drizzle of chili sauce, and optionally add sour cream.
