2/3 cup (100g) blanched almonds
2 1/2 cups plain flour (all-purpose flour)
4 tsp baking powder
One pinch cooking salt / kosher salt
250g/ 2 sticks unsalted butter, softened
3/4 cups white sugar (or caster sugar)
1 large egg, at room temperature (~50g / 2oz in shell)
1/2 tsp vanilla extract
1 egg white, lightly whisked
1/4 cup almond flakes

Toast almonds for 7 minutes at 180°C/350°F (160°C fan), cool, then blitz or bash into crumbs (some little bits is nice to bite into, don’t aim for fine flour texture).

Whisk flour, baking powder, and salt in a bowl.

In a separate bowl, cream butter and sugar until light and fluffy.

Beat in egg and vanilla.

Beat in bashed almonds.

Beat in flour in 3 lots.

Roll 30 x 2 tbsp into balls (#40 scoop), slightly flatten, brush with egg white, and top with flakes.

Bake for 20 minutes, cool for 5 minutes on tray then fully cool on rack.
