Preheat the oven to 180°C (350°F).
Melt butter in a saucepan over low heat.
Layer sheets of phyllo dough in a greased baking dish, brushing each layer with melted butter.
Sauté chopped onion in olive oil until translucent, about 5 minutes.
Add spinach to the onion and cook until wilted, about 3-4 minutes.
In a bowl, mix feta cheese, egg, yogurt, and black pepper until well combined.
Spread the spinach mixture evenly over the phyllo layers.
Pour the cheese mixture over the spinach layer.
Cover with additional phyllo sheets, brushing each with butter.
Sprinkle sesame seeds on top for added flavor.
Bake in the preheated oven until golden brown, about 30-35 minutes.
Remove from the oven and let cool slightly before slicing.
