Papas Rellenas, or stuffed potatoes, are a beloved Dominican snack or main dish that reflects the island's rich culinary heritage. Originating from Spanish influences, these delectable treats are often filled with seasoned meat and enjoyed at family gatherings or street food stalls. Today, variations exist across Latin America, showcasing local ingredients and flavors, making them a cherished comfort food for many.

Sweet potatoes offer more nutrients, while mashed potatoes can be a quicker option.
Place 2 quarts of water in a pot and add 3 large roasted potatoes with 2 teaspoons of salt.
Boil the potatoes for about 20 minutes until tender; check with a fork or toothpick.
Remove the potatoes from the water and place them on a rack or plate to dry.
Once cooled, peel the potatoes using a knife or spoon, cutting them in half or into pieces as needed.
In a bowl, add butter and rice the potatoes using a potato ricer or mash them until smooth.
Add salt, garlic, black pepper, cumin, olive oil, and egg yolk to the potatoes and stir until a smooth dough forms.
Take a portion of the potato dough in your palm, add your choice of filling (beef, chicken, crab, shrimp, or vegetables), and shape it like a dumpling, sealing it tightly to avoid air pockets.
Set the formed rellenos aside to cool at room temperature or refrigerate them.
Prepare a breading station with cornstarch, eggs, and processed corn flakes.
Roll each relleno in cornstarch, then dip in egg, and finally coat with cornflake crumbs.
Fry the rellenos in medium heat oil until they reach an internal temperature of 165°F or until golden brown, turning them to ensure even cooking.
