Pulse the oreo cookies in a food processor until finely ground.
Transfer the crumbs to a medium bowl and pour in about 2 to 3 tablespoons of melted butter.
Stir until well combined.
Transfer the mixture into an 8-inch square baking dish and spread and flatten the crumbs evenly.
Set aside and chill while preparing the caramel.
In a medium heavy-bottom saucepan, melt 1 cup of sugar with 1 tablespoon of water.
Add 1 cup of evaporated milk and stir.
Add 1 cup of butter.
Once the mixture is bubbly and starting to turn deep yellow, add in 1/2 cup of corn syrup and 1 teaspoon of pure vanilla extract.
Add 1 teaspoon of salt to balance the sweetness.
Stir the mixture constantly and scrape the sides occasionally.
Check the temperature using a candy thermometer; once it reaches about 240 degrees Fahrenheit, turn off the heat.
Pour the caramel over the prepared oreo crust and level it out.
Let the caramel set for about 10 minutes; it will cool down but still be sticky.
Sprinkle pecans and walnuts on top, along with a few handfuls of mini marshmallows.
Add leftover dark chocolate chips if desired.
In a separate bowl, add 1 tablespoon of vegetable shortening to semi-sweet milk chocolate and melt in the microwave for less than a minute.
Stir until the chocolate is melted and glossy.
Pour the melted chocolate over the caramel and ensure it covers the whole pan.
For finishing touches, drizzle melted white chocolate on top.
Let it chill for a few hours before slicing.
Cut the bars according to your preferred size and serve.
