Instant Pot Churro Bites

In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.

Once boiling, remove from heat and stir in the flour until a dough forms.

Allow the dough to cool slightly, then add the eggs one at a time, mixing well after each addition until smooth.

Stir in the vanilla extract until fully incorporated.

Heat oil in a deep frying pan over medium heat.

Using a piping bag or a spoon, drop small balls of dough into the hot oil, frying until golden brown on all sides.

Remove churro bites from the oil and drain on paper towels.

In a bowl, mix together the sugar and cinnamon for coating.

While still warm, roll the churro bites in the cinnamon-sugar mixture until fully coated.

Serve warm with chocolate sauce or caramel for dipping.
