Add diced tomatoes and green bell peppers; cook until softened, about 3-4 minutes.
Incorporate carrots and cubed nduma; stir well to combine.
Pour in vegetable broth and bring to a boil.
Reduce heat to low, cover, and simmer until nduma is tender, about 20-25 minutes.
Stir in coconut milk and spinach; cook until spinach wilts, about 2-3 minutes.
Season with coriander, cumin, turmeric, salt, and black pepper; mix well.
Serve hot with rice or bread.
