2 tablespoons apple or cider vinegar
1 tablespoon sugar
1 teaspoon fine gochugaru

1 tablespoon gochujang
4 tablespoons salty soy sauce
2 tablespoons sugar
1 tablespoon gochugaru pepper powder
1 tablespoon honey or rice or corn syrup
10 cl water
half an onion
quarter of an apple
2 or 3 cloves of garlic

Prepare the chicken by cutting it into pieces, removing excess skin and fat.

Pierce the chicken pieces several times for better marination.

In a bowl, mix 1 kg of chicken with 2 teaspoons of salt, 1 teaspoon of mild yellow curry, 1 teaspoon of sweet paprika, and 3 crushed garlic cloves.

Pour in 15 cl of milk and cover with plastic wrap. Let marinate in the fridge for 1 to 2 hours.

In a bowl, combine 100 g of wheat flour with the marinated chicken, mixing delicately to avoid lumps.

Heat oil to 170 degrees Celsius and fry the chicken pieces for 9 minutes for bone-in pieces and 5 minutes for boneless pieces.

Drain the chicken on a colander for 5 minutes to avoid sogginess.

Prepare a coleslaw salad with cabbage, 2 tablespoons of mayonnaise, 1 tablespoon of ketchup, 2 tablespoons of apple or cider vinegar, 1 tablespoon of sugar, and 1 teaspoon of fine gochugaru.

For the second fry, maintain the oil temperature at 170 degrees Celsius and fry for an additional 3 minutes.

Prepare the Yangnyeom sauce by mixing 5 tablespoons of ketchup, 1 tablespoon of gochujang, 4 tablespoons of soy sauce, 2 tablespoons of sugar, 1 tablespoon of gochugaru, 1 tablespoon of honey or syrup, and 10 cl of water.

Add half an onion, a quarter of an apple, and 2 or 3 cloves of garlic to the sauce mixture and heat until the onion bitterness disappears.
