Wash the scallions and slice them.
Pour 1 cup of flour into a mixing bowl.
Add 1 tablespoon of potato flour to the bowl.
Add a hefty pinch of salt and mix with a whisk.
Slowly add 2.5 cups of water half cup by half cup, mixing until you achieve a thin batter consistency.
Strain the batter twice to ensure there are no clumps.
Heat a pan and add a very small drizzle of oil.
Pour the batter into the pan and add the sliced green onions on top.
Cook for about 2.5 minutes, checking for browning on the sides.
Beat one egg and add salt and pepper, then place it in the pan with a little oil, swirling it to create a round shape.
After about 40 seconds, place the pancake on top of the egg.
After 10-15 seconds, flip the pancake and egg over.
Fold the crepe in the pan or transfer it to a plate and fold it with your hands.
Serve with oyster sauce for dipping.
