Heat a pan over medium heat and add about 1 teaspoon of olive oil.

Add diced onions to the pan and cook for about 30 seconds to 1 minute until they start to soften but not caramelize.

Add diced jalapeños to the pan and cook for another 30 seconds.

Add diced roma tomato to the pan and cook for about 20 to 30 seconds until just softened.

Add the scrambled eggs to the pan and let them sit for a few seconds before gently dragging them to the center, similar to making an omelet but allowing them to scramble.
