In a large mixing bowl, combine 1 cup of flour, 1/4 cup of sugar, 2 1/4 teaspoons of instant yeast, and 1/4 teaspoon of salt. Whisk together.
Add 2/3 cup of warm milk, 3 tablespoons of melted butter, 2 egg yolks, and 1/2 teaspoon of vanilla extract. Whisk until smooth.
Cover with plastic wrap and let it rest at room temperature for 10 minutes.
Add 1 1/2 cups of flour, enough until the dough holds together and no longer sticks to the bowl. Knead in the bowl for about 5 minutes.
Cover the bowl with plastic wrap and let it rise in a warm oven for 45 minutes or at room temperature for 1.5 hours, until doubled in size.
Dust your work surface with flour, turn the dough out, and roll it to just under half an inch thick.
Use a 2.5-inch round cookie cutter to cut out about 12 circles.
Transfer the donuts onto a parchment-lined baking sheet, keeping them evenly spaced.
Cover the donuts with a tea towel and let them rise in a warm oven for 20 minutes or at room temperature for 45 minutes.
Bake in a preheated oven at 375°F until lightly golden.
Brush the hot donuts with melted butter and roll in sugar to coat.
Cut a deep slit into each donut and fill with strawberry jam using a pastry bag.
