Peel and cube 8 small potatoes.
Rinse the potatoes and place them in a pot.
Chop 3 carrots and 3 celery stalks, then add them to the pot.
Chop 1/2 onion and add it to the pot.
Add enough water to cover the vegetables in the pot.
Season with salt and pepper to taste.
Put the pot on the stove and boil for about 20-25 minutes until the vegetables are tender.
Add leftover chicken (optional) to the pot to warm it up.
Add 3-4 bouillon cubes to the pot.
Cut 1/4 to 1/2 pound of Velveeta cheese into cubes and set aside.
Once the vegetables are tender, add the cheese to the pot and stir until melted.
Add a 5 oz can of Carnation evaporated milk to the pot and stir.
If desired, use a potato masher to mash some of the potatoes for a creamier texture, or use an immersion blender for a smoother soup.
