Prepare a bowl with 1 cup of softened unsalted butter.
Add 2 tablespoons of salt, 1 tablespoon of smoked paprika, 1 tablespoon of dried basil, 1 tablespoon of dried oregano, 1 tablespoon of dried thyme, 2 teaspoons of garlic powder, 2 teaspoons of onion powder, and ground black pepper to the butter and mix well.
Place a 9-pound turkey onto a baking sheet with a wire rack underneath.
Use a paper towel to absorb any extra moisture from the turkey.
Gently slide a rubber spatula or the back of a spoon under the skin of the turkey to loosen it.
Spread some of the butter mixture underneath the skin of the turkey breast.
Season the inside of the turkey with a couple teaspoons of sea salt.
Stuff the turkey with sliced orange, lemon, shallots, and garlic, along with a large bundle of fresh rosemary and thyme.
Tie the turkey legs together with a 3-foot section of butcher's twine and tuck the wings underneath the turkey.
Preheat the oven to 350°F (177°C).
Wrap the ends of the drumsticks with foil to prevent burning.
Bake the turkey in the preheated oven for 3 hours and 15 minutes.
Brush the turkey with more butter halfway through baking instead of basting.
Add 1 cup of chicken broth to the roasting pan for moisture.
Let the turkey rest in the roasting pan for 15-20 minutes after removing it from the oven.
Strain the drippings from the roasting pan through a fine mesh strainer lined with cheesecloth for gravy preparation.
In a small saucepan, melt 1/2 cup of unsalted butter, then whisk in 1/2 cup of all-purpose flour and cook for 2-3 minutes.
Slowly add 2 cups of chicken broth to the butter and flour mixture, whisking after each addition, and then add the turkey drippings.
Season the gravy with salt and ground black pepper to taste.
