Clean chicken feet by cutting off the nails with kitchen shears or a sharp knife.

Slice down the chicken foot to remove the tendons using a smaller knife.

Pull the tendons out and cut them off completely with kitchen shears.

Clean the chicken feet with salt, vinegar, and juice from two limes; let sit for about five minutes before rinsing again.

Pour hot boiling water over the chicken feet and let sit for about five minutes before draining.

Mix the chicken feet with one pack of salsa, one pack of bouillon powder, 2 tablespoons of epis, juice of one lime, ground cloves, and salt until well combined.

Add fresh parsley, fresh thyme, and one habanero pepper; marinate on the counter for about one hour.

Place a pot on the stove, set to medium-high heat, and cook the marinated chicken feet with the lid on for about 10 minutes.

Boil water in a separate pot to use for cooking the chicken feet.

After 10 minutes, remove the lid, stir the chicken feet, and add 3 to 4 cups of hot boiling water from the separate pot.

Cover with a lid, lower the temperature to medium heat, and allow to boil for 45 minutes to an hour.

After 45 minutes to an hour, remove the chicken feet from the broth and drain the broth into a different bowl for later use.

In the same pot, add olive oil and heat it up.

Add the tomato paste to the hot oil and allow it to cook, slowly adding some of the reserved broth a spoonful at a time.

Once the tomato paste is cooked, add the chicken feet back into the pot and stir to combine.

Add half of the bell peppers to the pot, reserving the other half for later.

Slowly add the remaining broth to finish making the sauce.

Allow to boil for about five minutes before adding the remaining bell peppers and onions.

Cover with a lid, turn off the heat, and finish cooking.
