Preheat the oven to 220°C (425°F) in a fan oven.

Add the self-raising flour to a large bowl.

Add the softened butter to the flour and rub it in with your fingertips until it resembles fine crumbs.

Make a well in the center of the flour mixture.

Whip up the 2 free range eggs and add them to the well.

Pour in 270 mls of buttermilk or sour milk into the egg mixture and stir it around.

Gradually add most of the buttermilk mixture to the flour mixture, leaving a little for glazing the scones.

Stir the mixture until it comes together, ensuring it is not too wet or too soft.

Put a little flour on your hands and on the board, then take the dough out of the bowl and shape it into a round.

Knead the dough very gently until it is smooth.

Flatten the dough to about 2.5 cm thick.

Use a 5.5 cm round cookie cutter, dipped in flour, to cut out scones and place them on a baking tray.

Gather any leftover dough, shape it again, and cut out the last few scones.

Brush the tops of the scones with egg wash using your fingers or a brush.

Place the scones in the oven to bake.
