Chili Mac and Cheese

8 ounces dry pasta
1 pound lean ground beef

2 diced bell peppers
3 minced garlic cloves
2 teaspoons chili powder

28 ounce can crushed tomatoes
1 cup chicken broth

Boil water in a pot.

Add 8 ounces of dry pasta to boiling water and cook al dente according to package instructions.

In another pan, heat oil over medium high heat.

Add 1 pound of lean ground beef and cook until browned, about 4 minutes.

Drain excess liquid from the beef.

Add more oil, 1/2 diced onion, 2 diced bell peppers, and 3 minced garlic cloves to the pan and cook until softened, about 4-5 minutes.

Season with salt and pepper.

Add 2 teaspoons of chili powder and 1 tablespoon of cumin, and mix in.

Add a 28 ounce can of crushed tomatoes and 1 cup of chicken broth, and mix well.

Bring the mixture to a boil, then lower the heat and let it simmer for about 10 minutes.

Add the cooked pasta and 2 cups of shredded cheddar cheese into the chili mixture and mix well.

Sprinkle another cup of shredded cheddar cheese on top.

Cover the pot for a minute or two until the cheese is melted.
