All-In-One Master Dough: How to Make Dough for Sheng Jian Bao, Da Bing, Mantou, and Baozi 如何製作麵團

Ingredients
- ●2 cups all-purpose flour
- ●1 cup warm water
- ●1/2 tsp salt
- ●1/2 tsp sugar
- ●1 tsp instant yeast
- ●1 tbsp vegetable oil
- ●1/2 lb ground pork
- ●1/4 cup chopped green onions
- ●1/4 cup chicken broth
- ●1 tbsp soy sauce
- ●1 tsp sesame oil
- ●1/2 tsp ginger, minced
- ●1/2 tsp garlic, minced
- ●1/4 tsp white pepper
- ●1/4 tsp black pepper
Instructions
- 1In a mixing bowl, combine the flour, salt, sugar, and instant yeast.
- 2Gradually add warm water to the flour mixture, stirring until a dough forms.
- 3Knead the dough on a floured surface for about 10 minutes until smooth.
- 4Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.
- 5In another bowl, mix the ground pork, green onions, chicken broth, soy sauce, sesame oil, ginger, garlic, white pepper, and black pepper until well combined.
- 6Once the dough has risen, punch it down and divide it into small pieces (about 12).
- 7Roll each piece into a circle about 3 inches in diameter.
- 8Place a spoonful of the pork filling in the center of each dough circle and pleat the edges to seal.
- 9Heat a skillet over medium heat and add a little oil. Place the buns seam-side down in the skillet.
- 10Add 1/4 cup of water to the skillet and cover immediately. Steam the buns for about 10 minutes until cooked through.
- 11Remove the lid and let the buns cook for an additional 2-3 minutes to crisp the bottoms.

- 11Remove from the steamer and let cool slightly before serving.
