1/2 lb. bacon
1/2 lb. 80/20 ground chuck
1/2 lb. Jimmy Dean Original breakfast sausage
3 tbsp. olive oil (divided)
1/2 small can chipotle adobe
8 oz. tomato sauce
8 oz. tomato paste
1 small can Rotel mild or hot
1 medium sweet Vadalia onion, diced
1 finely chopped jalapeno pepper with seeds and membranes left in
1 tbsp. minced garlic
2-3 tbsp. chili powder
1 tsp. course black pepper
1 tbsp. Morton's course kosher salt
1 tbsp. cumin
16 oz. beef broth
4 tbsp. Better Than Bouillon chili base

Press the saute button on the Instant Pot and select high heat.

When the pot is hot, add 1/2 of the oil and the bacon and cook until crisp. Remove and set aside.

Add the remaining oil, ground beef and sausage with a good pinch of salt to taste and cook until thoroughly browned.

When almost browned, add the onions and cook 5-7 more minutes until softened. During the last minute, add the garlic and jalapeno pepper.

Add the bacon back to the pot. Stir.

Add the can of chipotle in adobo sauce in a small food processor and blend to a paste.

Add the tomato sauce, tomato paste, chipotle in adobo, Rotel, chili powder, cumin and black pepper. Stir well.

Add the beef broth. Stir.

Press the cancel button to end the saute function.

Replace the lid and set the Valve switch to the 'VENT' position.

Press the slow cook button and select high heat. The time defaults to 4 hours.

When cook time is up, press the cancel button and remove the lid.

Add the Better Than Bouillon chili base and stir.

Taste and adjust seasoning, if necessary.
