Cut Chuck beef into about one inch size cubes.

Coat the beef cubes with olive oil and season with beef rub.

Chop garlic and onion and set aside.

Remove tips from dried chili pods and discard.

Place dried chili pods in a large Dutch oven and toast for about six to nine minutes.

Remove toasted chilies and place them into a blender.

Add 1 cup of water to the blender and puree the chilies until smooth and thick.

In the Dutch oven, cook the seasoned Chuck beef in batches until browned on each side, a few minutes per side.

Remove the browned beef and continue cooking the next batch until all meat is lightly browned.

Add more olive oil to the Dutch oven, then add chopped onions and cook for about five minutes.

Add chopped garlic and cook for another minute to soften.

Deglaze the pan with 12 ounces of beer and let it simmer for a couple of minutes.

Add all the browned meat back into the pot along with the thick chili paste and stir together.

Top with beef stock and bring to a simmer.

Cover and let it cook for about two to three hours until the meat is fork tender and the liquids have reduced a little.

Add Masa flour to the liquid and stir to thicken the chili.
