Chop 2 medium onions and 1 green bell pepper.

Prepare 6 cloves of garlic for later use.

Measure out 1/4 cup of chili powder, using half McCormick chili powder and half ancho chili powder.

Grind 1 tablespoon of cumin and 2 teaspoons of coriander seeds.

Measure 1 teaspoon of dried oregano and crush it slightly with your hands.

Heat a couple of tablespoons of avocado oil in a Dutch oven over medium heat until shimmering.

Add the chopped onions and green bell pepper to the pot, cooking until the onions are translucent, about 10-12 minutes.

Add the minced garlic to the pot and cook for a few more minutes.

Increase heat to medium-high and add half of the 2 lb ground beef, cooking until most of the pink is gone.

Add the remaining ground beef and continue cooking until no pink remains.

Stir in 1 can of diced tomatoes and 3 cans of V8 juice, mixing well.

Drain and add 1 can of red kidney beans and 1 can of pinto beans to the pot, stirring to combine.

Add 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of MSG to the mixture.

Bring the chili to a boil, then cover and reduce heat, simmering for 1 hour.

After 1 hour, taste for seasoning and adjust if necessary, then remove the lid and simmer for another hour to thicken.
