1 1/2 lb pork neck bones
1 medium shallot
1 medium yellow onion
Green onions (add more if you like)
1 knob ginger
1 whole garlic
1 whole sheet of kombu
3 pcs shiitake mushrooms (dried)
1 cup dried bonito flakes
2 cups water
2 tbsp soy sauce
2 tbsp mirin/sake
2 tbsp chashu sauce (optional)
2 tbsp salt
2 tbsp lard/rendered pork fat/neutral oil
2 tbsp garlic chips or fresh garlic slices
4-6 finely chopped green onions (do not include white parts)
3 pcs wood ear mushrooms
2 small nori (rectangle)
1 tsp butter
1 ramen egg
2 slices of chashu
1 cup ramen noodles
