1 cup water

Boil pork feet for 30 minutes. Strain. Rinse boiled feet. Boil feet again for 3-4 hours, skimming off impurities and adding water as needed.

Cut garlic, ginger, and scallion in half. Add garlic, ginger, scallion, dried shiitake, and konbu to pot. Simmer for 2-3 hours until broth begins to thicken.

Boil shio tare ingredients in a saucepan until salt dissolves, about 5 minutes.

After approximately 7-8 hours of cooking, stir the broth. It should be thick with no chunks of meat. If too thin or large pieces of pork remain, continue reducing.

Gather ramen toppings of your choice.

Add shio tare to bowl. Cook ramen noodles. While noodles are cooking, strain pork broth into bowl.

After noodles are cooked, strain and shake off excess water. Add to bowl.
