Heat a 12-inch deep skillet over medium-high heat and add 1 to 2 tablespoons of extra virgin olive oil.
Sauté half of a chopped medium yellow onion in the skillet until translucent, about 1-2 minutes.
Add 1/2 pound of ground beef and 1/2 pound of mild Italian sausage to the skillet; break it apart and brown it well over medium-high heat.
While the meat is cooking, break 8 oven-ready lasagna noodles into about 6 pieces each.
Once the meat is browned, drain excess grease, leaving about 1 tablespoon in the pan.
Layer the broken lasagna noodles over the meat mixture in the skillet.
Add a 28 oz can of crushed tomatoes and an 8 oz can of tomato sauce to the skillet, along with 1/2 cup of water; do not stir.
Bring the mixture to a simmer over medium-high heat, then reduce the heat to low, cover, and cook for 10 minutes.
After 10 minutes, remove the lid carefully to avoid splatter; stir in 1/2 teaspoon of salt, 1/2 teaspoon of sugar, and 1/2 teaspoon of garlic powder, ensuring the noodles are submerged in the sauce.
Cover and cook for an additional 10 minutes, stirring occasionally to prevent sticking.
After the second 10 minutes, turn off the heat and check that the noodles are not stuck together; stir gently if needed.
Sprinkle 1 teaspoon of dried oregano over the top of the lasagna.
Dollop 1 cup of ricotta cheese over the top without stirring it in, pressing it down slightly.
Cover and let it rest off heat for 5 minutes to allow the ricotta to melt slightly.
Gently fold the noodles over the ricotta cheese without fully mixing it in to keep pockets of cheese.
Sprinkle 6 oz of shredded low moisture mozzarella cheese evenly over the top.
Optionally, place the skillet under the broiler for 2-3 minutes to melt and brown the cheese, ensuring the skillet is oven-safe.
