1

Heat the oil in a 14-inch skillet over medium heat. Add the sausage and cook, breaking up the meat with a wooden spoon until browned, about 10 minutes.

2

Add the onions, bell pepper, garlic, and fresh tomatoes and season with 1-1/2 teaspoons kosher salt, 1/2 teaspoon red pepper flakes, and 1/2 teaspoon ground black pepper and stir to combine. Cook for 7 to 10 minutes, stirring until the vegetables become very soft and aromatic.

3

Add 3/4 cup wine, stirring to deglaze the bottom of the skillet for about 3 minutes. Scatter pasta over meat but do not stir. Pour crushed tomatoes and 2 cups of water over the pasta, cover, and bring it to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, until pasta is tender, about 20 minutes.

4

Off heat, stir in 1/2 cup freshly grated Grana Padano cheese or parmesan cheese. Taste and adjust seasoning with kosher salt and pepper if needed. Dollop heaping tablespoons of ricotta cheese over the top, cover, and let it sit for 5 minutes to soften. Sprinkle fresh basil and remaining 2 tablespoons of Grana Padano cheese. Serve.
