Fluffy Brioche Bread

Cultural Context

Brioche is a rich, buttery bread that originated in France, often enjoyed for breakfast or as a dessert. Its soft texture and slightly sweet flavor make it a versatile choice for various occasions, from casual meals to festive gatherings. The dough is enriched with eggs and butter, resulting in a luxurious bread that can be shaped into loaves or rolls. Brioche has a long history, dating back to the 15th century, and remains a staple in French bakeries today.

1

In a large measuring cup, add 1 1/4 cups of warm milk at about 110 degrees Fahrenheit.

2

Add 1/4 cup of granulated sugar and 2 teaspoons of dry active yeast; whisk and let sit for 10 to 15 minutes until frothy.

3

In a separate bowl, whisk 6 large eggs and set aside.

4

In a stand mixer, add 7 1/4 cups of bread flour, 3/4 cup of granulated sugar, and 1/2 teaspoon of salt.

5

Add the frothy yeast mixture and the beaten eggs to the stand mixer, along with 1 teaspoon of vanilla extract.

6

Mix on low speed until no patches of flour remain, then increase to high speed and mix until the dough comes together.

7

Add 1 cup of sliced softened unsalted butter and knead on high speed for about 10 minutes until smooth and elastic.

8

If the dough doesn't come together after 15 minutes, add an additional 1/4 cup of bread flour.

9

Remove the dough from the mixer, knead into a ball, and place in a greased bowl (greased with olive oil).

10

Cover with cheese cloth or plastic wrap and let rise in a warm place for about 1 hour until doubled in size.

11

Punch down the dough, place it on a floured surface, and divide into 2 equal parts.

12

Take one half and divide it into 3 equal pieces, roll each into a log, and braid them together.

13

Repeat with the other half of the dough.

14

Place both braided loaves into buttered loaf pans, cover, and let rise for 30 minutes to 1 hour.

15

Whisk 1 large egg with 1 teaspoon of water and brush the egg wash over the loaves.

16

Preheat the oven to 350 degrees Fahrenheit and bake for 35 to 40 minutes until golden brown.
