Lightly beat 4 eggs in a bowl using a fork for 30 to 60 seconds.

Check eggs for blood spots by cracking them into a glass before adding to the bowl.

Pour the checked eggs into the bowl with the beaten eggs.

Add 1/2 cup of seltzer to the eggs and mix lightly for another 15 to 30 seconds with the fork.

Pour in 1/3 cup of oil and whisk together lightly with the fork.

Add 1 cup of matzo meal to the mixture and mix gently with the fork, being careful not to over mix.

Cover the mixture and place it in the fridge to chill and firm up.

Bring a pot of heavily salted water to a rolling boil.

Spray a little cooking spray or oil onto your hands to prevent sticking.

Take about 1 to 2 tablespoons of the matzo ball mixture and gently form it into a ball about 1 to 2 inches in diameter.

Gently place the formed matzo balls into the boiling water.

Cover the pot and let the matzo balls simmer for 30 to 40 minutes.

After 30 to 40 minutes, remove the matzo balls from the water using a strainer, scooping from the bottom to maintain their shape.

Serve the matzo balls in soup, such as chicken soup with julienned carrots.
